A little about Thomas
Thomas has been the general manager of perhaps the finest and most respected restaurants in the city of Philadelphia’s history – Le Bec Fin and Lacroix.
He was hired by Georges Perrier as Manager of bar Lyonnais, downstairs from the acclaimed Le Bec Fin. He was able to lead the team to the restaurant’s first ever Mobil (now Forbes) 3 Star Award, independent of Le Bec Fin. Based on his skill and hard work, Thomas was promoted to General Manager of Le Bec Fin, where he successfully maintained the restaurant’s Mobil 5 Star Award.
He was recruited to become General Manager at another Philadelphia fine-dining institution, La Croix at The Rittenhouse. During his tenure there, the restaurant achieved the AAA 4 Diamond Award, and the Mobil 4 Start Award.
More recently, Thomas has been the General Manager of both R2L, where he was brought in to revamp the restaurant’s service difficulties, and then Butcher and Singer, a Stephen Starr luxury steakhouse.
Thomas brings a depth and breadth of restaurant experience to Dino’s Backstage. He has a deep understanding of high-quality, non-intrusive service, managing food and beverage inventory, and financial data collecting, and forecasting.
We have known Thomas since 2001, and gave him his first job in restaurant service at a small incarnation of “Napoleon Bar & Restaurant” in Society Hill in 2002… and we are VERY pleased to have him as part of our “cast”.
