Chef Knight’s mother was a caterer and from an early age he was constantly in the kitchen, as she showed him that cooking was an art, and from that point on he developed a passion for making food taste, smell and look good.
He went on to study at Run Away Bay Heart in Jamaica where he would hone his skills as a chef. His first job was at the resort Sandals Dunn’s River, in Jamaica as Chef de Partie, but he wanted to enhance his career and took the opportunity to join a program that brought him to the United States. Glaister went to Johnson & Wales University to continue his food education. He then continued his career working at The Moorings Restaurant in Newport, Rhode Island, then the Clarke Cooke House in 2001, where he worked for many years as a sous chef .
His desires and passions for cooking continue to push him to take on new challenges which brought him to Bistro 162, in Newport, as the Executive Chef. Chef Knight opened and designed the kitchen layout and menus. He then had the opportunity to work with a few notable chefs, including Christopher Lee, and Jesus Nunez at the 41 North Hotel & Marina in Newport.
He worked as a consultant chef for a few years in Delaware and Maryland and then to Allentown, Pennsylvania where he was the opening & Executive Chef for Hooks Seafood Restaurant.
Chef Knight is excited to be the Executive Chef at Dino’s Backstage and ready for his part in creating great memories to the people of Glenside, suburban Philadelphia, and the surrounding neighborhoods.
